1/2 c. butter, melted
10 eggs
1/2 c. all-purpose flour, sifted
1 tsp. baking powder
1 tsp. salt
1 (10-oz.) pkg. frozen chopped spinach, thawed and squeezed
1 (8-oz) can green mild diced chilies
1 pt. fine-curd cottage cheese
1/2 lb. cheddar cheese, shredded
1/2 lb. Jack cheese, shredded

1. Preheat oven to 400ºF. Place butter in 13x9 inch pan in preheated oven just to melt, about 3 minutes. Beat eggs in large bowl; mix in flour, baking powder and salt. Squeeze thawed spinach very dry and add to egg mixture along with melted butter, chilies and cheeses. Pour mixture into pan; bake 15 minutes.

2. Reduce heat to 350ºF; bake an additional 35-40 minutes. Let stand 5 minutes to set. Cut in 60 squares for an appetizer.
