Basil Parmesan Orzo Recipe

3 T butter
1 1/2 cups orzo
3 cups chicken broth
1/2 cup grade Parmesan cheese
6 T chopped fresh basil or 1 1/2 tsp dried
salt and pepper to taste

Directions:
Directions:
Melt butter in skillet over medium-high heat. Add orzo and saute 2 minutes, until slightly brown. Add broth and bring to a boil. Reduce heat, cover and simmer until orzo is tender and liquid is absorbed, about 20 minutes. Mix in Parmesan and basil and season with salt and pepper.

Orzo is the pasta that looks like rice. This dish has a risotto look and taste. The basil can be left out.
