3 eggs, beaten
4 tsp vanilla
1 cup oil
2 cups peeled & grated zucchini
2 cups all-purpose flour
2 cups sugar
1 tsp baking soda
2 tsp cinnamon

Directions:
Directions:
*Mix eggs, vanilla oil.

*Add remaining ingredients and 1 tsp salt.

*Preheat oven to 350*. Grease and flour 2 loaf pans.

*Pour batter into loaf pans and bake 50-60 minutes or until a toothpick inserted in center comes out clean.

*Cool in pans for 25 minutes, then transfer to cooling racks.
