1 medium potato, grated
1 - 6 inch zucchini, grated
1 eggs
2 T flour
1/4 tsp salt
pepper to taste
margarine to fry them

Directions:
Directions:
Mix all together in a bowl. Fry in 2-3 inch pancake shapes in hot margarine until brown and crispy. Serve with sour cream and seasoned salt. It's a very flexible recipe. If you use a bigger potato and zucchini, just add another egg and more flour.
