4 or 5 medium russett potatoes
5 slices of bacon
1/2 medium onion diced
1/4 C white vinegar
2 T chopped parsley
1/4 C very warm water
salt and pepper to taste

Directions:
Directions:
Boil potatoes until tender, leaving the skins on. Drain, and cool slightly. Chop bacon and saute slowly until you have crispy bits. Remove from heat, Remove the cooked bacon. Holding the hot potatoes with a towel, remove the skins then quarter and slice the potatoes, add the onion, parsley and bacon bits. Stir the vinegar to remaining bacon drippings, Pour over the potatoes add 1/4 C very warm water to help marinate, mix well. Pour into a large bowl sprinkle with extra pepper, cover with a glass lid or waxed paper. Let stand a hour or more before serving.

My Aunt, Martha Lavetti made this recipe at many family gatherings growing up. Some times she put the vinegar right into the potatoes and omitted the bacon all together. Then we called it Italian potato salad!
