1 bag potato chips (I like Kettle Chips!)
1/2 c. white sauce* (see recipe below)
1/4 c. cream cheese
2 tbsp crumbled Roquefort cheese
1 tbsp half-and-half
2 tbsp blue cheese crumbles

Directions:
Preheat oven to 350º. Place chips on baking sheet. Bake for 15 minutes. In a small saucepan, combine white sauce, cream cheese, Roquefort cheese and half-and-half. Cook over medium heat until cheese melts, stirring constantly. (Drink wine.) Remove from heat.

Transfer chips to serving platter. Drizzle cheese mixture over hot chips. Sprinkle blue cheese crumbles over.

* White sauce recipe:
2 tbsp butter (the real stuff!)
2 tbsp flour
1 1/4 c. milk, heated
Salt
Freshly ground pepper

Melt butter in saucepan. Stir in flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don't let it brown, about :02. Add the hot milk, continue to stir as the sauce thickens. Bring to a boil. Add salt and pepper to taste, lower the heat, and cook, stirring for :02 - :03 more. Remove from heat. To cool this sauce for later use, cover it with wax paper or pour a film of milk over it to prevent a skin from forming (ewwwww...).

I only made this once (because the white sauce is a pain in the **tt,) but Nate liked it and the Hartmans devoured it like they hadn't eaten for months, so I think this recipe is a keeper.
