2 1/2 cups flour
2 tsp. Baking Soda
2 tsp. Cinnamon
1/2 tsp salt
1 cup light Brown Sugar
1 cup white Sugar
1 cup of Butter softened
3/4 cup Buttermilk
3 eggs
2 tsp. Vanilla
2 1/2 cups of grated carrots (3 medium)
1/2 cup crushed pineapple
1 cup chopped walnuts
3 1/2 oz. flaked coconut

Directions:
Directions:
Cream sugars, butter, and eggs together. Add all other ingredients. Bake at 350º in a greased and floured 9x13 pan, for 55-65 minutes. Frost with Cream Cheese Frosting when cake is cool.
Frosting - 2 (3 oz) packages cream cheese, 1 cup butter, 2 tsp. vanilla, 4 cups powdered sugar. Cream together cream cheese, butter and vanilla. Gradually add powdered sugar and mix until smooth and creamy.
