1 c. shortening
3/4 c. sugar
1 egg
1 c. cooked carrots, mashed
2 c. flour
1/2 tsp. salt
2 tsp. baking powder
1 tsp. vanilla
1/2 tsp. almond extract

Directions:
Directions:
Cream shortening and sugar. Add egg and mashed carrots; mix well. Then add flour, sifted with salt and baking powder. Add vanilla and almond extract. Drop by small spoonfuls on a greased cookie sheet.
Bake at 350º till light brown on edges, about 10 minutes.
Frost while still warm with frosting made from juice of an orange, powdered sugar and grated orange peel.
