2 cups white flour
2 cups whole wheat flour
1 cups corn meal
1/2 cup shortening
1 teaspoon salt
1 1/2 cup (or more) hot water

Need a lefse grill and lefse stick for turning.

Directions:
Directions:
Mix flours, corn meal, and salt. With pastry blender, cut shortening in as in a pie crust. Add enough hot water to make a stiff dough. Take a piece of dough the size of an egg and roll very thin. With the lefse stick, carry flatbread to the lefse grill. Bake on the lefse grill so light on both sides, turning with the lefse stick. Then put into a warm oven to crisp. Stack one on top of each other and leave in warm oven for a while. Break into serving pieces and store in an air tight container. Good served with butter.

I heat the oven to 200 degrees and turn the oven off when the first flatbread goes in. I place the flatbread on a cookie sheet and leave for several hours or overnight.
