1 (4rib) standing beef rib roast 9 to 10lbs at room temperature 1 hour
2 T olive oil
3T kosher salt
1/3C mixed peppercorns

Directions:
Directions:
Preheat over to 450ºF with rack in the middle.
Rub roast all over with oil, then sprinkle with kosher salt.
Coarsely crush peppercorns in a folded kitchen towel with meat pounder or bottom of a pot. Coat meat on all sides with peppercorns, pressing to adhere.
Roast on rack in a 13X9 in. roasting pan 20 minutes.
Reduce oven temp. to 350º and roast until an instant read thermometer inserted into center of meat registers 110ºF,1 1/2 hrs more. Transfer to platter and let rest, uncovered 30 minutes (temp. will rise to about 130F for medium rare)
