3 lbs potatoes
1/3 c olive oil
1 head garlic
kosher salt

Directions:
Directions:
Preheat oven to 425º.

Wash & dry potatoes, don't peel; cut into 3/4 dice; toss in a large oven tray & pour over the oil, smulching with hands to mix well. Separate the head of garlic into cloves adding them to the tray & roast about 1 hour, turning once or twice during that time, until crispy & golden but still soft inside. Remove to plate & sprinkle with salt.
