1 ¼ Cup boiling water
1 Cup Quick oatmeal (uncooked) stir, then cool until only warm
½ Cup shortening or 1 cube margarine
1 Cup brown sugar
1 Cup white sugar
1 ½ Cups flour
2 eggs
1 teas. Soda
½ teas. Salt
1 teas. Cinnamon
1 teas. Vanilla
FROSTING
1 Cube margarine melted
1 1/3 Cup brown sugar
½ Cup evaporated milk
1 teas. Vanilla
1 ½ Cup chopped nuts (I usually use baking macadamia nuts, my mom uses walnuts or pecans)
1 ½ Cup coconut

CAKE
Preheat over to 350 degrees
Add quick oats to boiling water,stir and cool until warm.
Add all other ingredients to oats and mix well. Pour into a greased 13x9 baking pan and bake for 30-35 minutes.
FROSTING
Mix all ingredients together and spread over cake while hot out of the oven.
