1 lb. ground beef, turkey, pork or chicken
2 tsp. red curry paste (I use Mae Ploy)
2 T. flour
1 T. oil
4 cloves garlic, chopped
2 T. red curry paste
1 c. coconut milk
1 T. chunky peanut butter
2 tsp. sugar
1 T. fish sauce
Chopped, fresh mint

Mix ground meat with 2 tsp. red curry paste. Roll into 1 in. balls. Put flour in a plastic bag and toss meatballs to coat. Heat 1 T. oil in a large skillet. Cook meatballs over medium heat until browned on all sides. Remove meatballs and add garlic; cook until fragrant. Adjust heat if garlic cooks too fast. Add 2 T. red curry paste to the skillet (will be sticky) just to warm, about 2 minutes. Add in coconut milk and peanut butter; stir to combine. It will take about 3-4 minutes for sauce to reach a smooth consistency. Add sugar and fish sauce. Cook until bubbly. Pour meatballs back into skillet with curry sauce to finish cooking, about 3-5 minutes. Garnish with chopped mint. Serve with hot rice. *This is a spicy dish! Fish sauce has a very pungent, unpleasant smell but it is a must in Thai cooking.
