Saffron yellow rice mix
1/2 med. red onion, diced
1 green pepper, diced
1 red or yellow pepper, diced
1/2 tsp. garlic salt, divided
1/2 tsp. pepper, divided
3 T. olive oil
4 (4-6 oz.) boneless, skinless chicken breasts, cut into 1/2 in. pieces

Directions:
Directions:
Follow instructions on yellow rice mix and start rice which usually takes 30-40 minutes. While rice is cooking, sprinkle all diced vegetables with 1/4 tsp. each garlic salt and pepper. Add 1 T. olive oil to medium saute pan and cook vegetables over medium heat for 6-8 minutes, set aside. Sprinkle chicken with remaining garlic salt and pepper. Add 2 T. olive oil to large saute pan and cook chicken until no longer pink inside and browned on both sides, usually 10-12 minutes. Add vegetables to chicken and cook 2 more minutes. Serve chicken and vegetables aside the yellow rice or mixed in. ENJOY! Serves 6-8.
