3 lbs. butternut squash, peeled
1/2 c. apple cider
1/4 c. water
2 T. butter
1 T. sugar
1 tsp. salt
1/2 tsp. pepper
1/4 c. pecans, toasted and chopped
1 tsp. dried sage

Directions:
Directions:
Cut squash into 2 in. chunks. Place squash in a large saucepan and add cider, water, butter, sugar, salt and pepper. Bring to a boil. Cover and reduce heat to low. Simmer for 25 minutes. Uncover and cook 5 minutes or until thickened and squash is tender. Gently fold in pecans and sage. *You may substitute squash with sweet potatoes!
