1 1/2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. unsalted butter
3/4 c. brown sugar
1/2 c. granulated sugar
1 large egg
1 tsp. vanilla extract
1 (12 oz.) package small peanut butter cups, coarsely chopped

Heat oven to 375º. Line cookie sheets with parchment paper. In a large bowl, mix flour, baking soda and salt. In separate bowl, blend the butter, sugar, and brown sugar until creamy. Add the egg and vanilla and beat to combine. Gradually add the flour mixture. Fold in the peanut butter cups. Drop tablespoon-size mounds of dough 2 inches apart onto the baking sheets. Bake until light brown around the edges, 10 to 12 minutes.
