6-7 boneless, skinless chicken breasts
1 can cream of chicken soup
16 oz. carton sour cream
1 sleeve Ritz crackers
1 stick (1/2 c.) butter

Directions:
Directions:
Boil chicken breasts in a covered pot for about 40 minutes. You want them to be very tender. When done, shred them into a 9x13 in. casserole dish greased with butter. In a separate bowl, mix together thoroughly the soup and sour cream. Layer this over the chicken. In another bowl, melt the stick of butter and crumble sleeve of Ritz crackers into the butter (you are making a crust for the final layer) and mix together. Layer this over the soup and sour cream layer. Bake at 350ºF for approximately 30-40 minutes or until bubbly. *If you wish, make ahead and refrigerate for baking later in the day. Increase the heating time to about 1 hour. All of the ingredients are precooked so this is safe to do.

This casserole is always a favorite and I am asked for the recipe often. The ingredients are simple and it reheats beautifully. I often take this casserole to new mothers as the ingredients are mild yet so tasty together.
