3 skinless, boneless chicken breasts
sea salt
fresh ground black pepper
flour, for dredging
6 Tbsp. butter
5 Tbsp. olive oil
1/2 c. fresh lemon juice
1 c. chicken stock
1 jar brined capers, drained

Directions:
Directions:
Slice chicken breasts while partially frozen horizontally in half to make two thin pieces. Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.

In a large skillet over medium-high heat, melt 4 Tbsp. of butter with 3 Tbsp. olive oil. When butter and oil start to sizzle, add chicken pieces and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove from skillet to a plate.

Into the pan, add the lemon juice, chicken stock and capers. Bring to a boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Add remaining 2 Tbsp. of butter. Return all the chicken to the pan and simmer for 5 minutes.

Serve over rice.
