1 and 1/2 tbsp quick cooking tapioca
1/2 cup sugar
1/8 tsp salt
3/4 tsp cinnamon
1/4 tsp nutmeg
5 cups peeled sliced apples ( 4 golden delicious)
1 tbsp lemon juice
prepared pastry for a one crust pie
crumb topping:
1/2 cup of flaked coconut
1/3 cup firmly packed brown sugar
1/3 cup fine graham cracker crumbs
1/4 only slightly soft butter or margarine

Directions:
Directions:
Combine tapioca, sugar, salt, cinnamon and nutmeg, add to apple slices and mix well. Line 9 inch pie pan with pastry: flute edges. Fill with apple mixture and cover edges with a foil wrap bake at 425 deg. about 25 minutes or until apples are tender. Sprinkle crumb topping over surface of pie, sprinkle coconut over topping and bake for 5-10 minutes longer, or until syrup boils with heavy bubbles that do not burst.
Topping directions, combine ingredients and mix until the crumbs are the size of a pea.
