1 package 6 oz. orange gelatin
2 c. boiling water
1 8 oz. package reduced-fat cream cheese, cubed
16 oz. unsweetened crushed pineapple, drained
1 c. finely grated carrots
1 8 oz. reduced -fat whipped topping, thawed

Directions:
Directions:
In bowl, dissolve gelatin in boiling water. Place cream cheese in a food processor or blender, cover and process until smooth. Gradually add the dissolved gelatin and process until smooth. Pour into a large bowl. Stir in pineapple and carrots, fold in whipped topping.
Refrigerate for about 2 hours or until firm.

About 12 servings.
