1 large mango, peeled, pitted and diced (about 1 1/2 cups)
1 c. peeled and diced jicama
1 medium red bell pepper, diced
3-4 scallions, sliced
1/4 cup red onion, diced
1 jalapeņo pepper, finely diced
2 T. fresh lime juice
1 T. vinegar
1/2 t. salt.

Mix all together. Serve with grilled fish or chicken.

Peaches are a good substitute for mangoes or you can use a combination of mangoes and peaches.
