2 1/4 c. dates, chopped
1 c. white sugar
1 c. water
1 c. walnuts, chopped
1/2 c. shortening
1/2 c. butter
2 c. brown sugar
3 eggs, beaten
4 c. flour, sifted
1/2 tsp. salt
1/2 tsp. baking soda

Directions:
Directions:
In a medium saucepan cook chopped dates, 1 cup white sugar and water over medium heat approximately 10 minutes or until thick. Add chopped walnuts. Cool. In a large mixing bowl cream shortening, butter and brown sugar. Stir in beaten eggs and mix well. Add flour, salt and baking soda, mixing well. Chill a few hours in refrigerator or less in freezer. Then divide into 2 parts and roll each into a rectangle about 1/4 inch thick. Spread each rectangle with half of the date mixture and roll up as you would cinnamon rolls. Wrap in plastic wrap and chill overnight in the refrigerator or you may freeze and bake some or all of the rolls any time you wish in the next month or so by slicing rolls with a sharp knife into approx 1/2 inch thick slices. Bake on cookie sheets at 400º for 10-12 minutes or just till light brown. Filling does tend to stick to pans, so using parchment paper to bake on helps.

May substitute raisins for part of the dates. I usually use 1/2-3/4 cup raisins.
