2 cans whole long green beans
2 cans Aunt Penny's white sauce
1 can mushrooms chopped
1 small onion chopped
1 can water chestnuts chopped
1/2 lb. grated cheddar cheese
1 can bean sprouts
2 cans french fried onion rings (Monarch)

Directions:
Directions:
Put a layer of beans, bean sprouts, mushrooms, onions, chestnuts, white sauce, salt & pepper. Repeat 3 times. Put cheese on top of white sauce.
Bake in 2 1/2 qt. casserole covered in 400º oven 30 minutes. Remove cover and bake 10 minutes with the onion rings on top.

This recipe from our neighbor across the street had to be the predecessor to the "Campbell's Green Bean Casserole" recipe advertised every holiday season. I love the brand names for Aunt Penny's white sauce and the Monarch onion rings. I wonder if you can find them in the grocery store these days. I was watching a cooking show where they made a similar recipe to this one making a bechamel white sauce and deep frying shallots for the topper. Hmmm, wonder how it compares? This recipe from Terry Simmons was noted by Mom as "very good."
