1 c. sugar
1 T. minute tapioca
1 T. flour
1 T. grated orange rind
1 t. salt
3 c. rhubarb
2 T. melted butter
1 T. lemon juice

Directions:
Directions:
Mix sugar, tapioca, flour, grated orange rind and salt. Let mixture stand about 30 mins. Wash and dry rhubarb, cut into small pieces. Add rhubarb, melted butter and lemon juice to sugar mixture. Blend thoroughly, then pour into a 9-inch pie tin lined with pastry. Place pastry on top, then bake at 450º 15 mins. then reduce to 350º and continue baking 25 to 30 mins.
