12 lbs. boneless prime beef rib
1 c. coarse black pepper
1/4 c. garlic powder
1/2 oz. poultry seasoning
1/3 c. salt
1 tsp. cayenne pepper
3 Tbsp. onion powder

Directions:
Directions:
Mix all seasonings together. Rub onto meat. Wrap tightly with at least 3 layers of plastic wrap. Refrigerate for 2-3 days. Preheat oven to highest setting. Remove plastic wrap from meat and place in an open roaster pan with rack. Place 2 plus cups of water in bottom of roaster. Sear meat in oven for 8-10 minutes. Turn oven down to 175-195º. Cook for approximately 6 hours or until meat reaches 150º internal temperature. Let sit for 10 minutes before slicing.

Seasoning ingredients are correct for 12 lbs. of meat. Downsize accordingly if using a smaller cut and adjust cooking time as needed.
