Salad:
8 oz bow tie pasta, cooked
1/2 red bell pepper, diced
1/2 green pepper, diced
1 celery rib, sliced thin
1/2 tsp salt
1/4 tsp pepper
1/3 c. crumbled feta cheese
12 kalamata olives, pitted/quartered

Dressing: (this makes nearly 1c. of dressing)
1/4 c. Balsamic vinegar
1/4 c. veg. oil
1/4 c. olive oil
1 tbsp chopped fresh parsley
1 green onion, sliced thinly
1 minced garlic clove
1 tsp lemon juice
1/4 tsp salt
1/2 tbsp chopped fresh basil
1/2 tsp dried tarragon

Toss cooked pasta and next eight ingredients. Combine dressing ingredients in blender and mix. Add 1/4 dressing (or more if you like) and chill for at least 2 hours.

This has excellent flavor and goes wonderfully with grilled chicken or beef. Easily doubled. I made this oodles of times when living in Edmond, OK. We sponsored lots of picnics for the boys' baseball teams!
