2 lbs. zucchini, sliced 1/2 inch thick & cubed
1/4 c. onion, chopped
salt
1-1 1/2 lbs. hamburger, browned & drained
1 can cream of mushroom soup
1 c. sour cream
1 c. carrots, shredded
1 box stuffing mix
1/2 c. margarine

Directions:
Directions:
Cook zucchini, onion and salt in water, until tender (10 minutes). Combine hamburger, soup, sour cream, shredded carrots and zucchini. Mix stuffing mix with 1/2 c. margarine. Reserve enough for top of casserole, mix the rest in with the hamburger mixture. Put in 9x13 pan and bake at 350º for 45 minutes.
