4 cups diced potatoes, or 2 lb. bag frozen hash browns
1 1/2 cups chopped onions
1 cup chopped celery
4 cups water
4 tsp. salt
1/2 cup flour
2 tbsp. parsley
1/2 tsp. pepper
1 1/2 tsp. soy sauce or Worcestershire sauce
1 1/2 tsp. chives (optional)
2 cups milk
1 lb. shredded cheddar, or 1 can cheddar cheese soup
1/2 cup butter

Directions:
Directions:
Combine potatoes, onion, celery, water and salt and simmer until the potatoes are cooked.

In separate pan, blend the flour, pepper, soy sauce, and milk and cook separately until smooth and thickened. Add the cheese, butter, parsley, chives and stir well.

Pour cheese mixture over the hot, undrained potato mixture and simmer 15 minutes more as flavors blend.
