1 bag of chopped spinach cooked & squeeze water out
1 cup cooked rice, drain under cold water
2 eggs, beaten (save 8 tsp. for crust)
Olive oil

Add spinach to eggs; mix. Add rice and olive oil to moisten. Salt and pepper; mix together. Grease a 9 x 13 inch pan. Put mixture in. Spread the 8 teaspoons of eggs on top. Bake at 350º about 1 hour.
