German Lasagna Recipe

3/4 c. butter
3/4 c. flour
1 Tbsp. beef bullion granules
1 tsp. onion salt
1 tsp. pepper, divided
1/2 tsp. white pepper, (opt.)
2 1/4 c. milk
1 (14 oz.) can chicken broth
1 lb. smoked kielbasa, uncooked & chopped
2 eggs
1 1/2 c. (12 oz.) cottage cheese
9-12 lasagna noodles, cooked & drained
14-16 oz. sauerkraut, rinsed & squeezed dry
2 c. (8 oz.) Monterey Jack cheese, shredded, divided

In large saucepan, melt butter. Stir in flour, bullion, salt, 1/2 tsp. pepper and white pepper until smooth. Bring to a boil, cooking and stirring for 2 minutes or until it is thickened. Add sausage, heat through. In a bowl combine eggs with cottage cheese and remaining 1/2 tsp. pepper. Spread 1 c. sausage mixture in a greased 9x13 baking dish. Layer with 3 or 4 noodles (see notes), 1/3 of remaining sausage mixture, 1/2 of cottage cheese mixture, 1/2 sauerkraut, and 3/4 c. cheese. Repeat layers. Top with remaining noodles and sausage mixture. Dish will be full. Cover and bake at 350º for 50-60 minutes. Sprinkle with remaining cheese. (May also sprinkle some Parmesan cheese on top. Bake another 5 minutes. Let stand 10-15 minutes before cutting.

My baking dish is slightly bigger than 9x13 and accommodates 12 noodles (1 across width at end of other 3). This also makes it less likely to cook over.
