2 pounds summer squash ( yellow and zucchini) cooked until slightly tender
8 oz sour cream
1 can cream of mushroom soup
1 cup shredded carrots
8 oz pepperidge farm seasoned stuffing
1/2 cup melted butter
1 cup shredded cheddar cheese

Directions:
Directions:
In a bowl combine sour cream, soup and carrots. Fold in squash. In separate bowl mix butter and stuffing. Place 1/2 of the stuffing into a 2 quart casserole dish. Put squash mixture on top of stuffing. Now top with cheese and remaining stuffing. Bake at 350º
