Baby Yukon Gold Potatoes (5 per person)
3 branches Fresh Thyme
Salt to taste
Pepper to taste
Olive Oil 3 Tbls
Butter 2 Tbls

Directions:
With a mallet or rolling pen, crack each potato with a single hit. Do not smush the potato. Simply hit it hard enough to crack it. Add olive oil and butter to a medium hot skillet. When the butter has melted, add the potatoes, thyme, salt, and pepper. Allow potatoes to cook for three or four min. Shake the skillit to redistribute and turn the potatoes. Reduce the heat to low and cook until potatoes are tender, about 15-20 min.

These potatoes are a great alternative to a baked potato or mashed potatoes. We serve them with roast, steak, chicken, and I am sure they would go well with elk or wildebeest.
