2 Heads of Broccoli - Chopped
3 c. Swanson Fat Free (1/3 less sodium, Chicken Broth
3 Green Onions Chopped or Fresh Chives
Shredded Extra Sharp Cheddar Cheese for Garnish

Soup Variation - 1/2 Veggie Broth and 1/2 Chicken Broth can be used also.

For Cauliflower Soup - Use 1 Head Cauliflower, chopped

Directions:
In a 4 quart Stock Pot, melt butter until just melted. Add the Broccoli and saute until tender on medium low heat, about 5 minutes.
Add the chicken broth, chopped onions, and bring to a boil. Lower the heat and simmer for 20 minutes.
Use hand mixer and puree the broccoli ( but leave some chunks). A food processor or blender can be used also. Add to the rest of the chunky soup.

Add salt and pepper to taste. Garnish with Cheddar Cheese.
