1/2 small onion, chopped
2 clove garlic, minced (optional)
4 cups chicken broth
1 can diced tomatoes (with liquid)
16 oz frozen mixed vegetables
1 can kidney beans, drained and rinsed
1 generous cup macaroni (or similar pasta)
1 tsp Italian seasoning

Directions:

Cook pasta al dente, drain and rinse with cold water until cool. Saute onions and garlic in a little olive oil until translucent. Add tomatoes, vegetables, broth and Italian seasoning. Bring to a boil then reduce to a simmer. Cook until vegetables are tender. Add kidney beans and heat through. Add as much pasta as you like to each serving of soup. Refrigerate the leftover soup and pasta separately to prevent pasta from sucking up all the broth and getting mushy.
