This is a wonderful use of peaches in season. The dessert freezes well and will bring back the smells of summer when the weather is cold.


12 fresh ripe peaches, peeled, pitted and sliced into chunks
¼ C white sugar
3/8 C brown sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 ½ tsp. lemon juice
3 tsp. cornstarch

3/4 C flour
½ C brown sugar
1 tsp. baking powder
6 T butter or margarine, chilled and cut into small pieces

Mix together: 3 T white sugar
1 tsp. ground cinnamon


Preheat oven to 425 degrees.

In a large bowl combine peaches, ¼ C white sugar, 3/8 C brown sugar, cinnamon, nutmeg, lemon juice and cornstarch. Toss to coat evenly and pour into 10 x 15 baking dish. Bake in preheated oven for 10 minutes.

In a large bowl, combine flour, brown sugar, and baking powder. Blend in butter with your fingertips or a pastry blender, until mixture resembles coarse meal.

Remove peaches from oven and sprinkle topping over them. Sprinkle with sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.

Serves 6.
