½ pound broad noodles
1 tsp. salt
4 T melted butter
¼ C raisins
½ C nuts
Grated rind of 1 lemon (or 1 T dried ground lemon peel)
6 C boiling water
3 eggs, well beaten
1 C sugar
1 tsp. cinnamon
1 apple (Granny Smith) pared, cored and chopped

Directions:
Directions:
Boil noodles in salted hot water for 12 – 15 minutes. Drain thoroughly.

Grease heavy casserole dish. Arrange noodles in dish and pour eggs and 4 T melted butter over them.

Mix nuts, sugar, cinnamon, raisins, apple and lemon rind.

Stir apple mixture gently into noodles and bake in slow oven (325 degrees) for 45 minutes.

Serves 4 – 6.
