1 ¼ C rinsed lentils
5 C vegetable broth
2 C peeled and cubed sweet potatoes*
½ C chopped onion
½ C chopped celery
2 cloves garlic, minced
2 tsp. tamari
2 tsp. cumin
1 tsp. coriander
sea or kosher salt to taste
1 ½ C sliced zucchini
1 ½ C broccoli florets

*White, red, or yellow potatoes or any other root vegetable may be substituted.

Directions:
Directions:
In large pot or Dutch oven, combine lentils with 3 C broth and bring to a low boil. Reduce heat to medium-low, partially cover and simmer until lentils are barely tender, 20 - 30 minutes.

Add remaining 2 cups of broth, sweet potatoes, onion, celery, garlic, tamari and spices, and cook for approximately 40 minutes on medium heat, partially covered. Add more broth if stew seems too thick. Taste and adjust seasonings.

Add zucchini and broccoli florets and heat another 10 minutes until vegetables are just tender.

Serves 6.
