"As viscous as motor oil swirled in a swamp, redolent of burnt bell peppers nested in by incontinent mice and a finish reminiscent of the dregs of a stale can of Coca-Cola that someone has been using as an ashtray. Not a bad drink, though."--Excerpt from "The Moose Turd Wine Tasting" by T. A. Nonymous

Ingredients:
Ingredients:
6 – 7 C blanched spinach
1 medium onion
1/2 lb. butter
6 large eggs
2 lb. ricotta or cottage cheese
¾ lb. crumbled feta cheese
Salt and pepper
½ lb. filo dough (if frozen, thaw to room temperature)

Directions:
Directions:
Chop spinach and dice onion.

Melt 2 T butter in large frying pan and sauté onions until soft.
Add spinach, turn up heat, and cook until all moisture is gone. Remove from heat.

Melt remaining butter and set aside. Beat eggs and mix in cheeses. Add spinach mixture. Season with salt and pepper.

Carefully spread out filo dough flat and cover with moistened dish towel so that sheets do not become brittle.

Butter a 15” x 10” baking pan and place a sheet of dough on bottom of pan. Brush lightly with melted butter and continue layering sheets of dough, buttering each sheet until you have a stack of 10. (Dough should just fit the pan – if it does not, tuck in excess.) Spread the spinach mixture evenly on top and stack with another 10 sheets of dough, buttering them as before.

Bake in preheated 375 degree oven for 10 minutes. Turn oven down to 350 degrees for another 30 minutes. If top layer gets too dark, cover with brown paper.

Remove from oven and let rest 15 minutes before cutting.

Serves 8 as a main course.
