11/2 pound chicken
1/2 tsp salt
1/4 tsp black pepper
3 T fresh lemon juice
Cooking Spray
1 (8oz) package sliced fresh mushrooms
2 cloves of garlic
1/2 cup fat-free chicken broth
2 T chopped fresh parsley
1 T drained capers
Lemon wedges

Directions:

1. Sprinkle chicken with salt and pepper and drizzle with the lemon juice
2. Heat a large non-stick skillet over medium heat. Coat pan with cooking spray. Add chicken and cook 2-3 minutes on each side until chicken is browned. Remove from pan and keep warm.
3. Add mushrooms and garlic to pan and saute 3 minutes until mushrooms are tender. Add remaining T lemon juice, chicken broth, parsley, and capers. Return the chicken to the pan and cook uncovered 2-3 minutes until throughly heated.
