"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 package tofu
marinade of 3 T sesame oil, 5 T tamari, and ¼ tsp. garlic powder

Directions:
Directions:
Press tofu.

Cut the tofu into pieces. You can do cubes for croutons, sticks for dipping, flat squares to layer on sandwiches, or any shape of your choice.

Put the tofu in a zip lock bag. Cover with marinade and let sit for 15 – 30 minutes. Flip the tofu a few times so the marinade will be absorbed evenly. The longer you let the tofu sit, the deeper the flavor will be.

Preheat oven to 350 degrees. Cover a baking sheet with aluminum foil and coat with non-stick spray. Cook the tofu cubes for 10 minutes and then flip them over. Continue cooking and flipping every 10 minutes until the tofu is baked as you like it, 20 – 45 minutes total.

As you bake, the tofu will shrink, the texture will get chewier and the flavor will get more concentrated.

Use as a meat replacement in a traditional dish with a starch and vegetable. Use as a burger or on a sandwich. Toss cubes in a salad. Serve as an appetizer.
