2 lbs. frozen shelled edamame
1 C shredded carrots
½ C rice wine vinegar
3 T sesame oil
2 T tamari sauce
1 tsp. grated ginger
1 tsp. lemon juice
½ tsp. black pepper

Directions:
Directions:
Defrost the edamame. (You can do this easily by putting them in boiling water for a few minutes.)

In a large non-reactive bowl, whisk vinegar, oil, tamari, ginger and lemon juice.

Add drained edamame and carrots to the bowl and toss. Add salt and pepper to taste.

Chill at least two hours.
