2 ½ quarts vegetable stock (10 C)
8 mushrooms, sliced
4 carrots, sliced
1 8 3/4 oz. can garbanzo beans, drained
1 8 oz. can stewed tomatoes
1 6 oz. jar artichoke hearts, with marinade
2 small zucchini, sliced
1 onion, chopped
1 large celery heart with leaves, chopped
1 large tomato, peeled, seeded and chopped
¼ C chopped fresh parsley
1 garlic clove, chopped
1 small bunch spinach, stems removed
1 C broken vermicelli

Salt and freshly ground pepper
Freshly grated Parmesan cheese

Combine first twelve ingredients in large stockpot. Cover and cook over low heat until vegetables are crisp-tender, about 30 minutes.

Add spinach and vermicelli and cook 10 minutes.

Taste and season with salt and pepper.

Ladle into bowls, top with Parmesan cheese and serve immediately.

Serves 10.
