It is important to make this the night before.

8 slices bread
½ lb. grated sharp cheddar cheese
1 red pepper, diced
½ lb. mushrooms, sliced
¾ stick margarine
8 eggs
1 1/3 C milk
1 tsp salt
1 ½ tsp. dry mustard

Directions:

Cut crusts off bread.

Grease a 9” x 12” glass dish. Place bread pieces flat in pan. Put cheese on top of bread.

Melt margarine and sauté sliced mushrooms and diced pepper. Pour on top of cheese and bread.

Beat eggs, milk, salt and dry mustard. Pour over top of mixture in dish and let sit, covered, overnight in refrigerator.

Preheat oven to 350 degrees. Bake for at least one hour, covered. Check for doneness. (If liquid from melting cheese has accumulated, pour off and then return to oven briefly.)
