3 eggs
1 c sugar
1 tsp. lemon
2/3 c pumpkin
3/4 c flour
2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. ginger
1/2 tsp. salt

Filling:
3 oz. cream cheese
2 T. butter
1/4 tsp. vanilla
1 1/2 c powdered sugar.

Beat eggs for 5 minutes. add 1 cup of sugar slowly. Add lemon and pumpkin. Sift dry ingredients together. Add to egg mixture. Pour unto cookie sheet lined with wax paper. Bake at 375º for 15 minutes. Sprinkle with nuts if desired. Remove onto floured dish towel. Peel off wax paper. Roll and let cool.

Mix filling ingredients in electric mixer until smooth. Unroll cake and spread filling over it. Reroll and freeze. Let thaw slightly before slicing.
