2 cups chopped zucchini
1 diced large tomato
1/2 cup onion
1/3 cup paremesan cheese
3/4 cup biscuit mix ( i.e. Bisquick)
3 eggs
1/2 cup milk
salt and pepper

Directions:
Directions:
Place zucchini, onion, tomato and parmesan cheese in a bowl and toss. In a separate bowl, combine biscuit mix, milk, eggs and salt and pepper to taste and stir till smooth.
Place zucchini mixture in a prepared pie dish. Pour sauce over zucchini and add a little oregano if desired.
Bake at 400 for 30 minutes or until firm in the middle.
