You can use any other meat too, such as stewing beef, duck or lamb

Chop the belly pork into cubes after removing the skin.
Place in the wok and heat to render out the fat and drain.
Add slices of ginger along with some Szechuan pepper corns, star anise and cinnamon sticks. Stir fry the spices with the meat on a high heat before adding 1 tablespoon of sugar. Cook till the sugar caramelises and then add half a glass of Chinese cooking wine. Lower the heat to a simmer and add half a glass of chicken stock and half water. Leave to simmer for 40 minutes and add 2-3 tablespoons of dark soy sauce. Cook until reduced to a thin syrup adding water where necessary
