1 ½ cup French lentils or regular brown lentils
8 whole cloves of garlic (tied in a cheese cloth or in a tea strainer)
3 T olive oil
1 large red onion (minced)
3 cloves of garlic (minced)
1 ½ tsp cumin seeds – toasted and ground up
¾ tsp paprika
¾ tsp tumeric
1 ½ tsp ground ginger
¼ tsp cayenne pepper
2 cups diced canned tomatoes
1 cup fish stock or clam juice (*I substituted vegetable broth for the birth class and it turned out fine)
1 ½ tsp salt
1/8 tsp ground black pepper
¼ cup fresh parsley chopped
¼ cup fresh cilantro chopped
2 T lemon juice

Directions:
Directions:
Sort and clean lentils. Place lentils and garlic in the cheese cloth in a saucepan w/ water (water level should be about 2” above lentils). Bring to boil then turn down heat to med low to simmer until lentils are almost tender (about 20 minutes). Then drain and set aside.

Meanwhile prepare the other ingredients.

Sautee onions in olive oil until translucent. Then add garlic, cumin, paprika, tumeric, ginger and cayenne. Cook 1 minute. Then add tomatoes, stock and simmer until thick. Then add the lentils and add salt and pepper. Cook a little longer until you reach desired thickness and softness of lentils.

Right before serving, add the parsley, cilantro and lemon juice.
