¾ lb boneless, skin-on halibut filet, halved crosswise (can use any white fish for this..cod or tilapia)
2 tsp Canola Oil or Extra Virgin Olive Oil
1/4tsp each salt and ground pepper, or more to taste
4 cups shredded cabbage (green/red or both)
3/4cup chopped fresh tomatoes (Roma are easiest to chop up for this recipe)
2 ears of corn, kernels removed
2 TBS Mayonnaise
2 TBS Lime Juice
6 Whole Wheat Tortillas
1/3 cup Mild, Medium, or Hot Salsa

Directions:

Brush Halibut all over with oil, season with salt and pepper. Cook in large skillet or on the grill over medium heat, flipping once until golden brown and cooked through. (approximantly 10 min)
In a Large Bowl, toss together cabbage, tomatoes, mayo, lime juice and corn to make a slaw.
When the Halibut is done, remove the skin and flake the meat into bite sized pieces. Fill the tortillas with slaw and fish and serve with the salsa!
