6 medium potatoes
1 tsp. salt
3 Tbs. butter or margarine
¼ tsp. pepper
3 Tbs. flour
2 Tbs. chopped onion
2 – 2 ½ c. milk

Directions:
Directions:
1.Melt butter in a sauce pan.
2.Add flour and mix well.
3.Stir in milk and heat just to scalding, stirring frequently.*
4.Pare potatoes and slice thinly.
5.Layer potatoes, onions, salt and pepper in a greased casserole dish.
3b. Add ½ to 1 c. shredded cheese (sharp Cheddar or Colby cheese works well) to the white sauce and stir well.
**For au gratin potatoes you will need to mix the cheese sauce in with the potatoes before baking.
6.Pour the white sauce (milk mixture) over all.**
7.Cover and bake at 350°F for one hour.
8.Uncover and continue baking until top forms a brown crust.

*To make au gratin potatoes
3a. Remove the white sauce from heat.
