2 cups elbow macaroni (cooked al dente)
3 cups Colby cheese (grated) - more is okay!
1/2 to 1 cup diced ham (optional)
3 Tbsp. butter
2 Tbsp. flour
1/2 tsp. dry mustard
1/4 tsp. salt
1/4 tsp. pepper
1-1/2 cups milk

1. Preheat oven to 350º and boil water to cook macaroni.
2. Grate cheese
3. Make sauce as follows: Melt butter in large casserole in the microwave. Whisk in flour, salt, pepper, dry mustard, and milk. Heat mixture in microwave for 4-6 min., stirring after 2 min. and then after every additional minute. When thickened somewhat, add 2 cups of cheese.
4. Stir in macaroni and diced ham. Top with remaining cheese.
5. Bake at 350º for 30 min.
